Yan Coffee Break was a growing coffee brand, based in large shopping malls in key cities across Bulgaria. In 2009, the client engaged my services to conduct comprehensive barista training for their bar staff employees.

The training sessions were designed to equip them with the necessary knowledge and skills to elevate coffee standards across the entire chain. Key topics covered included:

  • Espresso Knowledge: Understanding the differences between Arabica and Robusta beans, and their impact on your espresso blend.
  • Knowing Your Machine: Proper startup procedures, maintenance techniques, and the art of extracting a perfect espresso shot.
  • Milk Texturing Techniques: Mastering the skill of creating velvety microfoam milk, essential for crafting exceptional lattes and cappuccinos.
  • Full Menu Preparation: Learning how to prepare a variety of espresso-based drinks, including flat whites, lattes, and cappuccinos.
  • Ingredient Storage: Proper storage techniques for milk and coffee beans to maintain freshness and quality.
  • End-of-Day Maintenance: Essential cleaning procedures to ensure optimal machine performance and hygiene.

After 2 weeks of extensive onsite training, we were able to implement improved coffee standards throughout, communicating new knowledge and skills. Espresso-based arabica coffee has become an integral part of the beverage menu, contributing significantly to the chain’s overall sales and customer satisfaction.
