Epicure Artisan Coffee, Berkhamsted

Yasmin was passionate about food, and wanted to combine this passion with coffee, ultimately by entering the world of independent coffee shops. After attending my coffee shop course, she were eager to take the next step and transform her vision into reality.

The Brief
The project involved a comprehensive spatial design, encompassing every aspect of the coffee shop, from creating the kitchen towards the rear, to staff facilities and the customer area. The premises was being used as a fashionable shoe shop, and had no practical storage or preparation areas. Yasmin wanted to prepare and display salads and other fresh food, and had already sourced her choice of coffee machine. Her favourite colour was purple, and this was taken into consideration when creating the logo. The Athenian philosopher, Epicurus, would be also be a factor of the final name. His views on the goal of human life (happiness, pleasure, peace) were to be taken into account, offering a relaxing, peaceful space.

Key Design Considerations
I began by producing existing and proposed layouts, enabling us to receive building quotes and to plan for equipment. Additionally, I provided a detailed equipment legend, outlining the specific requirements for each piece of machinery. These drawings were submitted to the local council on the government planning portal, along with a DAS (Design & Access Statement) document which I produced after my onsite evaluation. A Change of Use application was submitted. An agent was nominated by the client, for future council correspondence.

The large shopfront window was maximized with a raised counter and high seating, offering you a glimpse into the coffee shop and a prime view of the High Street.  A large, farmhouse-style table greets customers upon entry, offering an inviting place to sit and chat with friends. A bespoke banquette seating area, based upon the clients requirements, offered views of the counter, and further space for customers to relax.

A key element of the design was the striking counter, which was hand clad in reclaimed wood. The counter frame was meticulously designed using high-quality materials to withstand the rigours of daily operation. The counter height and length were carefully calculated to provide a comfortable and ergonomic workspace for baristas, enhancing productivity and reducing strain. A designated coffee station was included in the layout, complete with ample workspace for coffee grinders and drink preparation. A visually appealing food display area was integrated into the design, supplying customers with delicious items from the kitchen. This unique piece not only added character to the space but also served as a functional centerpiece.

The kitchen space was small, increasing the need for efficiency of design. It required  separate dish wash & food wash areas, refrigeration and dry storage areas, and a secure chemical cleaning cupboard. A swing door saved space. The space was designed in accordance with my operational flow chart. This operational flow chart identified safe and sanitary procedures for receiving deliveries of raw meat, dry goods, vegetables and groceries, minimising the risk of cross-contamination. A space-saving undercounter boiler provided hot water throughout.

Although it was a relatively small site, the current staff toilet would now need to be replaced with an accessible toilet. This was designed to specific, precise dimensions with fittings in accordance with Part M Building Regulations. To comply with Building Control & Fire Safety requirements, the existing old safety features were removed, and new CCTV, emergency lighting, heat sensors and modern fire-resistant doors were fitted throughout.

To establish a strong brand identity, we collaborated on the design of a distinctive logo. We presented four initial concepts, each reflecting the essence of Epicure. After careful consideration and several iterations, we finalized a design that perfectly embodied the essence of her brand.

To ensure the logo’s versatility and longevity, we provided Yasmin with a comprehensive brand logo pack. This package included vector formats, raster formats, typeface styles, and brand guidelines. The brand guidelines consisted of a detailed document outlining the proper usage of the logo, colour palette, and typography, ensuring a cohesive brand identity.

With the brand identity firmly established, Yasmin was able to focus on the physical aspects of the coffee shop. Along with her business partner, she took charge of the shopfitting process, transforming the space into a welcoming and stylish environment.

The Result
Epicure Coffee House is more than just a place to grab a cup of coffee. It’s a community hub, a thoughtful space, and a haven for those seeking inspiration and relaxation. With its warm and inviting atmosphere, coupled with exceptional coffee and delicious food, Epicure Coffee House has become an indispensable part of the local community.
