I am often asked to mentor my clients, and to also design their coffee houses. One such client was Ed, of Dropshot Coffee in Southfields, London.

His enthusiasm and vision was infectious, and I was excited to bring his passion to life.

The Brief 
Ed had spotted a golden opportunity to capitalize on the annual influx of tennis fans to the area. However, this unit presented a significant challenge, requiring extensive renovations both inside and out. A key part of his plan was maximizing the indoor space by making it open plan, and a kitchen also was needed towards the rear. Two outdoor seating areas were required, to accommodate the expected crowds. Time was of the essence, as all renovations needed to be complete in time to open the cafe’s doors before the start of the next Wimbledon tournament.

Key Design Considerations
The project involved a comprehensive space design, encompassing every aspect of the coffee shop, from creating the kitchen towards the rear, to staff facilities and the customer area. I began by producing existing and proposed layouts, enabling us to receive building quotes and to plan for equipment. Additionally, I provided a detailed equipment legend, outlining the specific requirements for each piece of machinery. Later, detailed counter plans and sections were produced in conjunction with Ed. His requirements & experience as a barista meant he knew what he wanted, which made my job designing it a little easier.

A key element of the design was the striking counter, which was handcrafted by a skilled artisanal colleague of mine, whom I consider to be a master carpenter. This unique piece not only added character to the space but also served as a functional centerpiece. Additionally, I recommended reliable suppliers for essential items like air conditioning systems, guaranteeing a comfortable environment for both staff and customers.

Throughout the project, I offered weekly project management, to oversee the progress and address any challenges that arose. By working closely with the Ed, I was able to pass on final working drawings, and the construction team were able to create a space that was not only aesthetically pleasing but also highly functional.

The Result
The goal was to create a coffee shop that exudes warmth and charm, inviting customers to relax and savour their favourite drinks. The staff also needed to work quickly and efficiently, delivering exceptional service. The success of this project was a testament to the power of close collaboration, constant planning, and Ed’s passion for coffee.
